Cheryl Harper, Santa, Bring My Baby Back, 12/17/2013: Peanut butter cookies are my favorite for a few reasons. I remember making them with my mother when my biggest contribution to the cause was eating way too much of the cookie dough. I used her heart-shaped cookie cutter to make these...just because. Baking makes me think of my mother. And even though I'm much better at ordering from menus than cooking anything, I can always find peanut butter in my kitchen (and it turns out that maple syrup is a good substitute for vanilla extract in case you were wondering). I think Willodean Jackson, owner of the Rock'n'Rolla Hotel in Santa, Bring My Baby Back (coming in December), would add a cookie like this to the menu of Viva Las Vegas. She does love the restaurant's peanut-butter-and-banana Elvis sandwich.


Easy Peanut Butter Cookies
2 cups peanut butter
1 cup brown sugar
1 cup white sugar
2 eggs
2 teaspoons baking soda
1 teaspoon vanilla extract
Pinch of salt


Mix sugar and peanut butter together, then add remaining ingredients. Place 1" balls on a greased cookie sheet, 2" apart. Make a criss-cross pattern with a fork or flatten to cut out shapes. Bake for 8-10 minutes at 350 degrees.
